I bought "Remove Ads" but ads still show. Open Settings in the game and tap Restore Purchases while connected to the internet.

I lost my progress. Progress is stored on your device. Deleting the game or switching phones without a backup removes it.

How do I turn off tracking? iOS Settings → Privacy & Security → Tracking, and Settings → Ad Privacy Options in the game where it is offered.
